  • bunch (40 g/ oz) flat-leaf (Italian) parsley, leaves picked

Method

Place the parsley and garlic in an upright blender and blend until finely chopped. With the motor running, gradually add the oil and blend until smooth. Pass through a fine sieve. Place the mussels and pipis in a bowl and dress with the garlic emulsion and chives. Serve immediately.
