Remove any bloodline from the tuna and season with salt and pepper. Heat a frying pan over high heat. Once the pan is very hot, add the tuna and cook for 2 minutes. Turn the tuna, reduce the heat to medium and cook for another 2 minutes. Remove from the pan and rest in a warm place. Halve lengthways and serve immediately.
