Bass Groper with Sour Orange, Mussels, Clams and Mustard Purée

Spoon the sour orange sauce, mussels, clams and borlotti beans onto 6 plates. Place a piece of bass groper on top. Using 2 tablespoons, place a quenelle of purée next to the fish. Finish with a line of dill oil on the plate.
