  • 200 ml (7 fl oz) verjuice
  • 20 g (β…” oz) ginger, sliced
  • 10 g (β…“ oz) coriander seeds
  • 0.3 g xanthan gum


Place the verjuice, ginger and coriander seeds in a small saucepan and bring to the boil. Remove from the heat and allow to infuse for 1 hour. Strain. Using a stick blender, blend in the xanthan gum until combined and the mixture has thickened. Set aside.
