Hapuka with Baby Globe Artichoke and Squid Ink Crumbs

  • 2 sprigs dill, leaves picked and finely chopped

Place the potato-yoghurt purée in the centre of 6 plates and top with the hapuka. Toss the artichokes and samphire in the dill and distribute between the plates. Scatter over the crumbs.
