Presentation

Place 2 pieces of nougat on a tray and spoon over the truffle sauce to coat, then place on plates. Spoon some truffle sauce on the plate and stand a piece of uncoated nougat on top. Arrange the salsify, mushrooms and baby leek around the plate.
