Peel and chop the bananas and place in a saucepan. Add the milk, sugar and lecithin, stirring until dissolved. Cover with a cartouche and slowly bring to the boil. Remove from the heat and set aside for 1 hour to infuse. Strain through a fine sieve, discarding the solids. Reheat the milk until warm, then aerate with a stick blender and serve immediately.
