Presentation

Halve each carrot cake portion widthways. Place one standing and the other piece lying down on 6 plates. Place some purée alongside a piece of cake. Place a small spoonful of crumbs next to each piece. Using a warm teaspoon, scoop some gel on top of both piles of crumbs. Using 2 tablespoons, place a quenelle of sorbet on top of a piece of cake.
