Place the milk, cream, tonka bean and a pinch of salt in a saucepan and bring to the boil.

Place the egg yolks, sugar and stabiliser in the bowl of an electric mixer and whisk until light and pale. While whisking, gradually add the milk mixture and whisk until well combined. Chill over ice. P
