• 6 g (⅕ oz) calcium chloride
• 100 g (3½ oz) chocolate buttons (53% couverture)
• 25 g (⅘ oz) cocoa
• 150 ml (5 fl oz) sugar syrup
• 5 g (⅙ oz) sodium alginate

Combine the calcium chloride with 500 ml (17 fl oz/2 cups) water. Set the calcium bath aside.

Place the chocolate, cocoa, sugar syrup and 300 ml (10½ fl oz) water in a double boiler over simmering water and stir until melted and combined. Remove from the heat and allow to cool to below room temperature.

Transfer the chocolate mixture to an upright blender, add the alginate and blend until smooth.

Transfer to a bowl. Using a round tablespoon measuring spoon, spoon the mixture into the calcium bath, placing no more than 6 balls at a time into the bath. Leave in the bath for approximately 1½ minutes or until a skin forms. Scoop out using a slotted spoon, then rinse in a clean water bath. Scoop out again and drain on paper towel. You will need 6 spheres. Serve immediately.
