Spice Mix

Ingredients

  • 25 g ( oz) coriander seeds
  • 15 g (½ oz) black peppercorns
  • 20 g ( oz) cardamom seeds
  • 1 cinnamon stick
  • 1 star anise
  • 7 g (¼ oz) caster (superfine) sugar

Method

Preheat the oven to 170°C (325°F/Gas 3). Roast the spices for 8 minutes, then grind in a spice grinder. Add the sugar and grind until the sugar is powdered. Pass through a fine sieve. Set aside.
