Ingredients

  • 200 g (7 oz) cumquats, halved and pitted
  • 150 g ( oz) caster (superfine) sugar

Method

Place the cumquats in a saucepan, cover with water, bring to the boil, then drain. Repeat blanching and draining twice. Add the sugar and 300 ml (10½ fl oz) water to the pan, place over low heat and simmer for 30 minutes or until the cumquats are candied and translucent. Allow to cool, then drain, discarding the liquid. Set the cumquats aside.
