There are several types of pasta sauce based on walnuts in northern Italy, including the one; this is among my favorites. It also happens to be the easiest. If you like, you could throw in a tablespoon of capers, too.

Ingredients

  • ½ cup walnuts, roughly chopped
  • Salt to taste
  • 2 tablespoons extra virgin olive oil

  1. Preheat the oven to 350°F. Place the walnuts on an ungreased baking sheet and toast in the oven until fragrant, shaking occasionally, 10 to 15 minutes. Set aside. Bring a large pot of water to a boil and add salt.
