Ingredients

  • One 1-inch piece fresh ginger, peeled and minced
  • 2 scallions, trimmed and chopped

Method

  1. Mix the ginger, scallions, and salt together thoroughly in a heatproof bowl.
  2. Place the oil in a small saucepan or skillet over high heat until smoking. Carefully pour the oil over the ginger-scallion mixture, mix well, and serve, or store, refrigerated, for up to 3 days (bring back to room temperature before serving).
