  • Combine ingredients for spice paste in a food processor and blend until smooth.
  • Heat oil in a wok and stir-fry the spice paste until fragrant. Add the beef and stir-fry for about 1 minute, then add the pea aubergines.
  • Add the coconut milk and kaffir lime leaves and simmer until meat is tender. Season with salt and sugar. Before serving, add lime juice.
