  • Chicken breasts 4, about 100 g ( oz) each, diced
  • Peanut oil


  • Combine chicken with marinade ingredients and set aside for 1 hour.
  • Heat oil in a wok and fry the cashew nuts until golden. Remove and set aside.
  • In the same oil, sauté chillies, garlic and ginger until fragrant. Add preserved soy beans and marinated chicken. Cook until the chicken is tender.
  • Add the wine (if using), red and yellow capsicums a
