- Cooking oil 3–4 Tbsp
- Finely minced garlic 2 tsp
- Finely minced shallots
- Heat oil in a wok and stir-fry the garlic, shallots and chilli paste until dry and fragrant.
- Add the anchovies and stir-fry for about 1 minute. Break the eggs into the wok and stir until cooked.
- Add rice and stir until thoroughly mixed.
- Season with salt and sugar. Remove from wok and garnish as desired. Serve immediately.
