  • Fresh yellow noodles 2 kg (4 lb 6 oz), blanched just before serving

  • Make gravy. Combine ingredients for spice paste in a food processor and blend until smooth.
  • Heat oil in a wok and sauté spice paste until fragrant. Add meat curry powder and preserved soy bean paste and sauté until fragrant.
  • Add beef, water, sweet potatoes and galangal and boil for 20 minutes.
  • Add tomatoes and peanuts and lower heat to simmer
