Shortbread is a simple dough made from very few ingredients. The flavor is buttery and rich and is delicious as is, or a variety of flavors can be added. Shortbread can be rolled out and cut into cookies, or used for cookie bars, as the base of a tart, or the crust of a cheesecake.


  • 113 grams (½ cup, 1 stick) unsalted butter, room temperature

  1. At least 30 minutes before mixing your dough, set out the butter to come to room temperature. Measure out the rest of the ingredients.
  2. Prepare the oven and baking pan according to the specific use of the dough (details follow).
