Swiss meringue is a style of meringue that involves heating egg whites with sugar over a double boiler. Heating the mixture makes it more stable and makes a meringue that is silky-smooth in texture. Swiss meringue can also be made into a frosting called Swiss meringue buttercream. Many people prefer this style of buttercream to American buttercream because it is smoother and less sweet.
