All blue cheeses make good dressings. They do not all taste the same, however, so it isn’t a good idea to call them all by the same name. Roquefort is a salty, sheep’s milk cheese from south-western France, with a taste that is more austere, less creamy, than, say, dolcelatte or Stilton, both of which make excellent but different dressings
