As with any dressing, the quality and variety of mayonnaise’s constituents - oil and vinegar -will make more difference than any cute variation achieved through adding herbs or gherkins to the finished article. For instance, the substitution of a little walnut oil for some of the groundnut called for in the recipe will change the style of the mayonnaise quite appreciably, as would the use of sherry vinegar rather than the plain white wine variety.
