Salad cream is one of the great culinary dressings, but its prestige has been lowered by the commercial product that was popular in the post-war era. It’s sweeter and more delicate than mayonnaise, but it shouldn’t be as sweet as the salad cream you’ll remember.

Method

  1. Separate the hard-boiled eggs into whites and yolks. Chop the whites and keep to one side to mix into the dressing at the end.
  2. Make a paste of the yolks with the water, and some salt, pepper, the cayenne, mustard and sugar.
  3. Incorporate the cream by trickling it on to the paste while stirring or whisking continuously.
