Pears ripen from the inside outwards and are difficult to gauge for readiness to eat. Some varieties do suit poaching, and this gives an opportunity to add other flavours.

Ingredients

  • 100 g granulated sugar
  • 375 ml red wine
  • 2 cinnamon s

Method

  1. In a saucepan that is small enough to ensure the liquid covers the pears, heat the sugar, red wine and spices together slowly so that the sugar melts properly.
  2. Peel the pears and put these into the wine syrup. Cover with a lid and poach until done - this normally takes around 20 minutes, but will vary.
  3. Leave the pears to cool in the wine syrup and ser
