This is a Lebanese dish, with flavours that typify eastern Mediterranean and North African cooking. The fish is braised and served in its own sauce like stew.

Ingredients

  • 1.5 kg John Dory, filleted
  • salt and pepper
  • sunflower oil, for frying

Method

  1. Salt the fillets, then heat enough sunflower oil to deep-fry them. When the oil is hot, fry the fillets for a minute to seal them and then lift out from the pan.
