This is a decent example of a cooked tart. Other stone fruits, such as cherries and apricot, would substitute perfectly for plums. Soft summer fruits such as strawberries and raspberries are better suited to assembled tarts - just arranged on top of a cooked base and some fruit purée or crème pâtissière - for they will not be improved by further cooking.
