There is jargon for chocolate work. A mixture of melted chocolate and cream is called ‘ganache’. This can be a cake-filling, but is usually cooled and used mixed with rum or Cointreau as chocolate truffles. Truffles are the perfect accompaniment to a final coffee in a long meal. They can be flavoured with any spice or liqueur you want and are just fine without any extra flavouring.
