Boiled vegetables form the traditional side dish that shares the plate with whatever is the star of the meal. Broad beans are a pain to prepare properly, and deserve to be centre stage for this reason alone. They are seasonal - the cost of air freight from the southern hemisphere is too high for the bulk needed and the price obtained - and, baby specimens aside, broad beans need to be peeled twice, to remove the tannic, leathery casings.
