The tradition of steaming hearty puds serves winter nights well. This particular example will work at any time of year as the absence of suet gives a lighter result. It is also very easy to make and will test your steaming equipment - or lack of it - before you attempt anything more adventurous.

Ingredients

  • 100 g unsalted butter, softened, plus extra for greasing
  • 100 g caster sugar

  1. To make the batter, cream the butter and sugar together, then stir in the dry ingredients before beating in the eggs and then adding the milk and combined orange juice and zest.
