Baking powder works because of the reaction between the tartaric acid and the alkaline bicarbonate of soda. This produces the gas that aerates a scone dough, soda bread and, in this case, batter. You can produce an even lighter, more delicate batter by adding whisked egg whites as in the beer batter.

Ingredients

  • 250 g plain flour
  • 1 tsp salt
  • 1 tsp

Method

  1. Sieve the flour, salt and baking powder into a bowl.
  2. Whisk in the water until the batter is completely smooth. It should have the consistency of cream.
