Chicken meat isn’t tough, so it doesn’t need to be braised in order to make it more palatable. It does, however, benefit from the opportunity to slowly incorporate other spices and flavours. The process should ensure that the meat is cooked right through, so there are no problems with the meat and cooking liquor souring if it is to be kept for reheating another time.
