This Hungarian beef dish can variously be spelt as ‘goulash’ or ‘gulyas’. It makes little difference to the Hungarians, who know it as ‘porkolt’, a word that signifies the meat has been seared before the lid goes in the pot. It is a traditional cowboy dish - there are great plains called the puzstas in Hungary where they raise and drive cattle - just like the Wild West but without Red Indians, rawhide or John Wayne. ‘Gulyas’ means ‘cowboy’
