Stock, whether from vegetables, fish or meat, is a primary building block of good cooking. Poor stock will devalue everything in which it is subsequently used. A complex or ornately decorated dish, perhaps a soup with fanciful garnishes and great swirls of cream, for instance, which turns out to be bland and under-flavoured, will feel preposterous and ridiculous, like wearing a starched collar and dirty underwear.
