Bran muffins made with this mix are not sweet and cakelike, but branny and wheaty. If you are accustomed to a sweet muffin, you may want to use the full amount of sugar indicated. Muffins made with the smaller measure of sugar will have only a hint of sweetness, making for a better contrast when you heap a morsel with Bitter Orange Marmalade.
