This familiar component of the antipasto platter is available in a quality range that runs the gamut from the soybean oil-packed version usually available in neighborhood supermarkets to the elegantly presented mushrooms packed in delicate olive oil that are found in the best Italian specialty shops. Mushrooms seem to respond well to olive oils both bold and fragile, so choose your oil according to preference.
