Fresh horseradish combined with cooked beets, vinegar, and seasonings is a favorite Eastern European condiment. The beets mellow and sweeten the assertive flavor of the horseradish and impart their inimitable coloring.

Ingredients

  • ¾ cup (about 3 ounces) grated horseradish, prepared with ¼ cup Re

Method

  1. Mix the grated horseradish, grated beets, salt, and sugar thoroughly. Taste, and add more vinegar, if it is needed.
  2. Spoon into a jar, cover, and refrigerate for several hours before using.
  3. Before serving the horseradish, taste it and add more salt, sugar, or vinegar, if you wish. Refrigerated in a covered container, the beet horseradish will keep for
