These hardy, spicy German Christmas cookies have been softened and simplified in their grocery-store form. You may still purchase the traditional “peppernuts” in some European-style bakeries, but they are available only during the Christmas season and at a pretty steep price. They keep virtually forever—as they are without shortening, but richly spiced—and, like gingerbread, they are welcome all year round. Be sure to let them mellow for several weeks after baking to lose their initial rock-hardness.
