For this confection you need fresh-picked leaves, ideally gathered several hours after a rain shower, when they are freshly washed but not moist. Any of the good garden mints may be candied. We especially like peppermint leaves—smaller than most kinds—but spearmint, apple mint, and bergamot or orange mint are all flavorful when preserved this way.
