Shiny, smooth, and hard—not brittle, so they won’t break into shards. If you happen to like hard candy grownup-style, make small drops without sticks. Lollipop sticks are sold by suppliers of confectionery ingredients (see Mail-Order Sources of Supplies). The same suppliers also have more powerful flavorings available than the ones sold in the market. They give a more intense taste, if you prefer, and should be used in small doses.
