These delicious home-roasted nuts are much crisper and drier than their store-bought cousins. Nor do they have the oily texture and flavor that often obfuscate the delicate, natural taste of roasted nuts. You can salt them to taste, which is no small advantage for those of us who find commercial nuts more than slightly oversalted.

Ingredients

  • 1 egg white
  • pounds whole, unblanched almonds
  • 4 to 5 teaspoons

Method

  1. Preheat the oven to 275 degrees.
  2. Beat the egg white until frothy. Place the nuts in a sieve and add the beaten white. Toss and stir the nuts to coat them evenly.
