Making peanut butter has become a national pastime. In case you haven’t happened upon one of the many recipes that abound in health-food and appliance cookbooks, use this one.

You may simply pour a can of salted roasted nuts into your blender or food-processor container and whirl away. Or you may use raw nuts and toast them before grinding, as we prefer. They are cheaper, apt to be fresher than most roasted nuts bought in bulk, and you can control the degree of toastiness, saltiness
