  1. Puree the thawed frozen spinach or the blanched fresh spinach, using a blender (do the spinach in two batches, with a little water added to each) or a food processor fitted with the steel blade. Pour the puree into a very fine sieve (or a colander lined with cheesecloth) and let all the liquid drain; you should have a scant cup of firm puree.
