For a colorful variation, add 1 cup (3½ oz/105 g) peeled, shredded carrots to the sauerkraut before packing it into the jars. For a caraway flavor, mix 3 tablespoons caraway seeds with the cabbage before fermentation. Enjoy with sausages and on sandwiches or salads.
Place the cabbage in a large bowl, sprinkle with the salt, and toss to combine. Cover and let stand until softened, about 30 minutes.
