  • Pearl onions, 1 cup (4 oz/125 g)

Method

Have ready 3 sterilized jars and their lids.

Cut the top ¼ inch (6 mm) off the tip of each onion and trim the root ends just to remove the exterior roots, leaving the hard root core intact so the onions won’t fall apart during cooking. Break apart the garlic heads, separate the cloves, and discard the papery outer skins but do not peel the cloves themselves. Stem the tomatoes.
