Nutty tasting and not too sweet, this homemade dairy-free twist on eggnog is great served all by itself over ice. During the holiday season, however, a shot of spiced rum in each glass is a festive and welcome addition.

Ingredients

  • Slivered blanched almonds, 2 cups (9 oz/280 g)
  • Medjool dates

Method

Place the almonds and dates in a large heatproof bowl. Add the boiling water and let the mixture steep for 1 hour.

Working in batches, transfer the almonds, dates, and soaking water to a blender and process until smooth. Dampen a thin dish towel or double layer of cheesecloth with cold water and wring out all of the moisture. Line a fine-mesh sieve with the towel or cheesecloth and set
