Tonic was originally a health drink because it contained quinine, a natural malaria preventative. A smart fellow discovered that tonic tasted much better mixed with booze, and the gin and tonic was born. Look for cinchona powder and citric acid at herb stores or online.

Ingredients

  • Sugar, 1 cup (8 oz/250 g)
  • Lemongrass,

Method

In a food processor, combine the sugar, lemongrass, and lime leaves and pulse until finely ground. Add the cinchona bark powder and citric acid powder and pulse to combine.

Using a fine-tooth grater, grate the zest from the lime and reserve. Halve and juice the lime and measure 2 tablespoons
