Salsa verde is an easy yet flavorful sauce that serves as a tool for countless Mexican dishes. If you like some heat but do not want to sweat, use a deveined, deseeded jalapeño for this recipe instead of a serrano. If you’re more adventurous and want to take that heat level up a few notches, use a serrano.

Method

  1. Turn the broiler to high and place a rack about 4 inches (10 cm) from the heat source.
  2. Arrange the tomatillos, unpeeled garlic, and serrano (or jalapeño) in a single layer on a sheet pan.
  3. Roast, undisturbed, until browned, about 6 minutes
