“Traditional” Birria Ramen

I’ve seen very high-end ramen shops make versions of birria ramen and usually feel that they’re just trying too hard. I’m not knocking their high-end creations, but in my opinion birria ramen was probably originally created with leftover birria after a night of drinking. For this reason, I think it should be approachable, and that’s what I’ve tried to do with this recipe. It calls for the ramen you subsisted on through college. I used the Tapatío brand of ramen because I like their spice pa
