My mom makes THE best enchiladas I have ever had. When I return to Chicago to visit her, enchiladas are the one dish I absolutely have to have. We’re now a few states apart, so I had to try my best to make my own delicious enchiladas to hold me over until I can have hers again.

Ingredients

  • Canola oil
  • 2 cups (240 g) shredded Chihuahua cheese
  • 1 cup

Method

  1. Add a thin layer of oil to a frying pan and heat over medium-low until shimmering.
  2. Meanwhile, in a medium bowl, toss the Chihuahua cheese and crumbled queso fresco with the cilantro and red onion.
  3. Evenly mix the birria into the adobo in a shallow, wide bowl.
  4. Place a tortilla on top of the birria mixture, then flip, evenly coating both sides.
