My mom makes THE best enchiladas I have ever had. When I return to Chicago to visit her, enchiladas are the one dish I absolutely have to have. We’re now a few states apart, so I had to try my best to make my own delicious enchiladas to hold me over until I can have hers again.

Method

Add a thin layer of oil to a frying pan and heat over medium-low until shimmering.
Meanwhile, in a medium bowl, toss the Chihuahua cheese and crumbled queso fresco with the cilantro and red onion.
Evenly mix the birria into the adobo in a shallow, wide bowl.
Place a tortilla on top of the birria mixture, then flip, evenly coating both sides.
