Chicken Enchiladas Suizas

Enchiladas Suizas were definitely never on any of my mom’s or family’s rotation of dinner dishes, but they sure made their way into my belly. These were on the complete opposite side of “authentic Mexican enchiladas.” These were more what chain Mexican restaurants offered or what non-Mexican moms brought to the parent-teacher-conference potlucks. Regardless, they were delicious and they’ve made their way into my rotation of birria dishes.
